Ingredients

  • 1 lb Ground beef (80% lean)
  • 2 tsp Fresh thyme, chopped
  • 1 tsp Salt
  • 0.5 tsp Black pepper, freshly ground
  • 1 tbsp Olive oil
  • 1 Red onion, thinly sliced
  • 0.5 cup Dry red wine
  • 1 tsp Sugar
  • 0.5 cup Aioli
  • 1 tsp Lemon juice
  • 1 tbsp Fresh parsley, chopped
  • 4 slices Gruyere cheese, sliced
  • 4 Brioche burger buns
  • 4 Lettuce leaves
  • 1 Tomato, sliced

Directions

Step 1

In a large mixing bowl, combine the ground beef, fresh thyme, salt, and black pepper. Mix gently with your hands until evenly combined, being careful not to overwork the meat.

Step 2

Divide the mixture into 4 equal portions and shape into burger patties, about ¾ inch thick. Make a slight indent in the center of each patty with your thumb to prevent puffing while cooking.

Step 3

Heat olive oil in a skillet over medium heat. Add the sliced red onions and sauté for 5-7 minutes, until they begin to soften.

Step 4

Add the dry red wine and sugar to the skillet with the onions. Lower the heat to medium-low and allow the mixture to simmer for 8-10 minutes, stirring occasionally, until the liquid reduces and the onions are caramelized. Set aside.

Step 5

To make the herb aioli, combine the aioli base, lemon juice, and chopped parsley in a small bowl. Mix thoroughly and refrigerate until ready to use.

Step 6

Preheat a grill or stovetop grill pan over medium-high heat. Grill the burger patties for 3-4 minutes on each side, or until they reach your desired level of doneness.

Step 7

During the last minute of cooking, place a slice of Gruyere cheese on each patty and cover with a lid or foil to melt the cheese.

Step 8

Toast the brioche burger buns lightly on the grill or in a dry skillet for 1-2 minutes until golden brown.

Step 9

To assemble the burgers, spread a generous layer of herb aioli on the bottom half of each bun. Add a lettuce leaf, a slice of tomato, and the cheesy thyme burger patty.

Step 10

Top the patty with a heaping spoonful of caramelized wine onions, then finish with the top half of the bun. Serve immediately and enjoy!
