Ingredients

  • 1 cup Whole wheat flour
  • 0.5 cup All-purpose flour
  • 2 tablespoons Sugar
  • 0.5 teaspoon Salt
  • 4 tablespoons Unsalted butter, cold and cubed
  • 0.25 cup Water, ice cold
  • 1 tablespoon Honey
  • 0.5 teaspoon Salt (for topping, optional)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the whole wheat flour, all-purpose flour, sugar, and salt.

Step 3

Add the cold, cubed butter to the dry mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

Step 4

In a small bowl, mix the ice-cold water and honey. Pour this mixture into the dry ingredients and stir until a dough forms. If necessary, add a tiny bit more water, 1 teaspoon at a time, to bring the dough together.

Turn the dough out onto a lightly floured surface and knead it gently to form a cohesive ball.

Step 6

Divide the dough into two equal portions. Roll out one portion at a time to about 1/16-inch thickness. The thinner the dough, the crispier the crackers will be.

Step 7

Using a sharp knife, pizza cutter, or pastry cutter, cut the dough into small squares or rectangles, approximately 1 to 1.5 inches in size.

Step 8

Transfer the cut pieces onto the prepared baking sheet. You can place them close together as they do not spread during baking.

If desired, lightly sprinkle the tops of the crackers with additional salt.

Bake in the preheated oven for 8-10 minutes, or until the crackers are golden brown and crisp. Watch them carefully in the last few minutes to prevent burning.
