Ingredients

  • 4 cups Chicken or vegetable broth

  • 3 medium Celery stalks, diced
  • 1 large Carrot, diced
  • 3 cloves Garlic, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Fresh thyme, chopped
  • 1 teaspoon Dried sage
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 cup Dried cranberries or raisins (optional)
  • 0.5 cup Pecans or walnuts, roughly chopped (optional)

Directions

Step 1

Rinse the wheat berries thoroughly under cold water. In a medium pot, bring the broth to a boil, then add the wheat berries. Reduce to a simmer, cover, and cook for 45-50 minutes or until the wheat berries are tender but slightly chewy. Drain any excess liquid, if needed, and set aside.

Step 2

While the wheat berries are cooking, heat the olive oil in a large skillet over medium heat. Add the onion, celery, and carrot, and sauté for 5-7 minutes until softened.

Step 3

Add the minced garlic, thyme, sage, salt, and pepper to the skillet, and cook for an additional 1-2 minutes until fragrant.
