  • 2 cups All-purpose flour

  • 2 large Eggs
  • 0.75 cups Granulated sugar
  • 0.5 cups Brown sugar
  • 0.5 cups Vegetable oil
  • 2 teaspoons Vanilla extract
  • 2 cups Zucchini, shredded
  • 0.5 cups Chopped nuts (optional)
  • 0.5 cups Raisins (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, wheat germ, baking soda, baking powder, ground cinnamon, and salt. Set aside.

In a large mixing bowl, beat the eggs. Add the granulated sugar, brown sugar, vegetable oil, and vanilla extract, and whisk until well combined.
