Ingredients

  • 1 cup wheat germ
  • 1 cup rolled oats
  • 0.5 cup whole wheat flour
  • 0.5 cup honey
  • 0.25 cup brown sugar
  • 0.5 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 0.5 cup chopped walnuts or almonds
  • 0.5 cup dried cranberries or raisins
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, combine the wheat germ, rolled oats, whole wheat flour, ground cinnamon, and salt. Stir well to distribute the ingredients evenly.

Step 3

In a small saucepan over medium heat, melt the butter. Add the honey, brown sugar, and vanilla extract. Stir until the sugar is dissolved and the mixture is smooth.

Step 4

Pour the wet mixture into the dry ingredients and mix until combined. The mixture should be slightly sticky. Fold in the chopped nuts and dried cranberries (or raisins).

Step 5

Transfer the mixture to the prepared baking pan, spreading it out evenly and pressing it down firmly with a spatula or clean hands.

Step 6

Bake in the preheated oven for 18-20 minutes, or until the edges are golden brown. Avoid overbaking, as it may make the bars too hard.

Step 7

Remove the pan from the oven and let it cool completely on a wire rack before cutting into 12 bars. Use the parchment paper overhang to lift the bars out of the pan easily.

Step 8

Store the bars in an airtight container at room temperature for up to 5 days, or refrigerate for longer freshness.
