Ingredients

  • 1 cup wheat berries
  • 4 cups water
  • 0.5 teaspoon salt
  • 1 red apple
  • 1 green apple
  • 1 cup red seedless grapes
  • 2 celery stalks
  • 0.5 cup walnuts
  • 0.5 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 2 tablespoons fresh parsley
  • 0.25 teaspoon ground black pepper

Directions

Step 1

Rinse the wheat berries under cold water. Add them to a medium-sized pot with 4 cups of water and 1/2 teaspoon of salt.

Step 2

Bring the pot to a boil over high heat, then reduce the heat to low and let simmer for 35–40 minutes, or until the wheat berries are tender yet chewy.

Step 3

Once cooked, drain the wheat berries and rinse them under cold water. Set them aside to cool completely.

Step 4

Meanwhile, dice the red and green apples into small bite-sized pieces, leaving the skin on. Slice the grapes in half, and thinly slice the celery stalks.

Step 5

Toast the walnuts in a dry skillet over medium heat for 4–5 minutes, stirring frequently, until fragrant. Let them cool and then roughly chop.

Step 6

In a small bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, honey, and ground black pepper to make the dressing.

Step 7

In a large mixing bowl, combine the cooled wheat berries, diced apples, sliced grapes, celery, and chopped walnuts.

Step 8

Pour the prepared dressing over the mixture and gently toss until everything is evenly coated.

Step 9

Finely chop the fresh parsley and sprinkle it over the salad. Toss lightly to combine.

Step 10

Serve the Wheat Berry Waldorf Salad immediately or refrigerate for up to 2 hours to allow the flavors to meld. Enjoy!
