Ingredients

  • 1 cup Wheat berries
  • 3 cups Vegetable stock
  • 2 tablespoons Soy sauce
  • 1 tablespoon Balsamic vinegar
  • 1 tablespoon Olive oil
  • 1 tablespoon Minced shallot
  • 1 teaspoon Lemon juice
  • 1 teaspoon Chopped fresh dill
  • 0.25 teaspoon Freshly ground black pepper
  • 1 pinch Sea salt
  • 1 optional Crackers or toasted baguette slices (for serving)

Directions

Step 1

Rinse the wheat berries under cold water to remove any debris.

Step 2

In a medium-sized pot, combine the wheat berries and vegetable stock. Bring to a boil over high heat.

Step 3

Reduce the heat to low, cover, and simmer for 45–50 minutes, or until the wheat berries are tender but still chewy. Drain any remaining liquid and allow the wheat berries to cool slightly.

Step 4

In a mixing bowl, whisk together soy sauce, balsamic vinegar, olive oil, minced shallot, lemon juice, dill, black pepper, and sea salt to create the dressing.

Step 5

Add the cooked wheat berries to the bowl and toss to coat the grains evenly with the dressing.

Step 6

Cover the bowl and refrigerate for at least 1 hour, allowing the flavors to meld and absorb into the wheat berries.

Step 7

Before serving, taste and adjust the seasoning if necessary.

Step 8

Serve chilled on crackers, toasted baguette slices, or as a savory component to a larger appetizer platter.
