Ingredients

  • 1 cup wheat berries
  • 1 cup wild rice
  • 6 cups water
  • 1 red bell pepper
  • 1 cucumber
  • 0.5 red onion
  • 0.5 cup fresh parsley
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the wheat berries and wild rice separately under cold water.

Step 2

In a medium saucepan, bring 3 cups of water to a boil. Add the wheat berries, reduce to a simmer, and cook uncovered for 45-50 minutes until tender but chewy. Drain and set aside.

Step 3

In another medium saucepan, bring 3 cups of water to a boil. Add the wild rice, reduce to a simmer, and cook uncovered for 40-45 minutes or until the grains split open and are tender. Drain and set aside.

Step 4

While the grains cook, dice the red bell pepper, cucumber, and red onion into small, uniform pieces. Finely chop the parsley and set the vegetables aside.

Step 5

In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper to create the vinaigrette.

Step 6

Once the wheat berries and wild rice have cooled slightly, combine them in a large mixing bowl with the chopped vegetables and parsley.

Step 7

Drizzle the vinaigrette over the salad and toss gently to coat all the ingredients evenly.

Step 8

Taste and adjust seasoning with additional salt or pepper if needed.

Step 9

Serve the salad immediately, or refrigerate for up to 2 days to allow the flavors to meld further. Serve chilled or at room temperature.
