Ingredients

  • 2 tablespoons olive oil or butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups mixed vegetables (e.g., carrots, celery, zucchini, etc.), chopped
  • 2 medium potatoes or sweet potatoes, diced
  • 6 cups stock or broth (chicken, beef, or vegetable)
  • 1 cup cooked or uncooked grains (e.g., rice, quinoa, or pasta)
  • 1 cup protein of choice (e.g., shredded chicken, beans, or tofu)
  • 2 teaspoons spices (e.g., salt, pepper, thyme, oregano, or paprika)
  • 2 tablespoons fresh herbs (e.g., parsley or cilantro), chopped (optional)

Directions

Step 1

Heat the olive oil or butter in a large pot over medium heat.

Step 2

Add the chopped onion and cook for 3–4 minutes until translucent.

Step 3

Stir in the minced garlic and cook for another 1–2 minutes until fragrant.

Step 4

Add the chopped mixed vegetables and sauté for 5 minutes to soften slightly.

Add the diced potatoes or sweet potatoes and pour in the stock or broth.

Step 6

Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 20 minutes, or until the potatoes are tender.

Step 8

Add your protein of choice and let it heat through.

Step 9

Season the soup with spices, tasting and adjusting as needed.

Step 10
