  • 1 cup Vegetable oil
  • 2 teaspoons Pure vanilla extract
  • 4 Large eggs
  • 3 cups Carrots, grated
  • 1 cup Crushed pineapple, drained
  • 0.5 cups Chopped pecans or walnuts (optional)
  • 8 ounces Cream cheese, softened
  • 0.5 cup Unsalted butter, softened
  • 4 cups Powdered sugar, sifted
  • 1.5 teaspoons Pure vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
