  • 300 grams All-purpose flour
  • 3 large Eggs
  • 1 tablespoon Olive oil
  • 150 grams Westphalian ham (finely chopped)
  • 200 grams Ricotta cheese
  • 50 grams Parmesan cheese (grated)
  • 2 tablespoons Fresh parsley (chopped)
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 3 tablespoons Unsalted butter
  • 120 milliliters Heavy cream
  • 1 tablespoon Fresh chives (chopped, for garnish)

Directions

Step 1

In a large mixing bowl, combine the flour and a pinch of salt. Make a well in the center and crack in the eggs. Add the olive oil and mix until a rough dough forms.

Step 2

Transfer the dough to a floured surface and knead for 8-10 minutes, until smooth and elastic. Wrap in plastic wrap and let rest for 30 minutes.

While the dough is resting, prepare the filling. In a bowl, mix the chopped Westphalian ham, ricotta cheese, Parmesan cheese, parsley, salt, and black pepper until fully combined.
