  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 bay leaf
  • 4 cups water

Directions

Step 1

Rinse the pinto beans under cold water and pick out any debris. Place the beans in a large bowl, cover with water, and soak overnight (or for at least 8 hours).

Drain the soaked beans and set them aside.

Cut the bacon into small pieces. Heat a large pot or Dutch oven over medium heat and cook the bacon until crisp. Remove the bacon pieces with a slotted spoon and set aside, leaving the bacon fat in the pot.

Dice the onion and mince the garlic. Add the onion to the pot and sauté in the bacon fat until translucent, about 5 minutes. Add the garlic and cook for an additional minute until fragrant.
