Ingredients

  • 4 large egg whites
  • 0.5 medium, diced red bell pepper
  • 0.5 medium, diced green bell pepper
  • 0.25 medium, diced yellow onion
  • 2 slices, chopped into small pieces low-fat turkey or chicken ham
  • 2 tablespoons low-fat shredded cheddar cheese
  • 1 light spray olive oil spray
  • 0.125 teaspoon salt
  • 0.125 teaspoon black pepper
  • 1 teaspoon, chopped fresh parsley (optional, for garnish)

Directions

Step 1

Prepare your ingredients by dicing the red bell pepper, green bell pepper, and onion. Chop the low-fat turkey or chicken ham into small pieces.

Step 2

In a small bowl, whisk the egg whites with the salt and black pepper until frothy.

Step 3

Heat a non-stick skillet over medium heat and lightly spray it with olive oil spray.

Step 4

Once the skillet is heated, add the diced red and green bell peppers, diced onion, and chopped turkey or chicken ham. Sauté for 3-4 minutes until the vegetables are tender and the ham is lightly browned.

Step 5

Reduce the heat to low-medium and pour the whisked egg whites over the sautéed mixture. Allow the egg whites to cook undisturbed for about 1 minute.

Step 6

Stir gently with a spatula, folding the eggs into the vegetable and ham mixture as they cook. Continue stirring occasionally for another 2-3 minutes until the egg whites are fully cooked but still tender.

Step 7

Sprinkle the low-fat shredded cheddar cheese over the scramble and let it melt for 30 seconds. Gently fold the cheese into the scramble.

Step 8

Transfer the Western Skinny Scramble to a plate and garnish with freshly chopped parsley, if desired. Serve immediately and enjoy!
