Ingredients

  • 4 medium Russet potatoes
  • 1 large Red bell pepper
  • 1 large Green bell pepper
  • 1 medium Yellow onion
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 2 tablespoons Fresh parsley

Directions

Step 1

Wash and peel the potatoes, then cut them into 1-inch cubes.

Step 2

Dice the red bell pepper, green bell pepper, and yellow onion into small, evenly sized pieces.

Step 3

Preheat a large skillet over medium heat and add the olive oil.

Step 4

Once the oil is hot, add the potatoes to the skillet. Spread them out in an even layer and let them cook undisturbed for about 5 minutes until they begin to crisp up.

Step 5

Stir the potatoes and continue cooking for another 10-12 minutes, stirring occasionally, until they are golden brown and tender.

Step 6

Add the diced bell peppers and onion to the skillet. Stir everything together and cook for another 8-10 minutes until the vegetables are softened and slightly caramelized.

Step 7

Season the mixture with salt, black pepper, garlic powder, and paprika. Stir well to coat the vegetables and potatoes evenly with the seasonings.

Step 8

Remove the skillet from heat and sprinkle chopped fresh parsley over the top for a burst of freshness.

Step 9

Serve the Western Potatoes hot as a side dish or enjoy them on their own.
