Ingredients

  • 4 pieces bone-in pork chops
  • 2 tablespoons vegetable oil
  • 1 medium yellow onion, chopped
  • 1 medium green bell pepper, chopped
  • 3 cloves garlic, minced
  • 14.5 ounces canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the vegetable oil in a large skillet over medium-high heat.

Step 2

Season both sides of the pork chops with salt and black pepper.

Step 3

Sear the pork chops in the skillet for 3–4 minutes per side until golden brown, then remove them and set aside.

Step 4

In the same skillet, add the chopped onion and green bell pepper. Sauté for 4–5 minutes until softened.

Step 5

Add the minced garlic and cook for 1 more minute, stirring frequently to prevent burning.

Step 6

Stir in the diced tomatoes (with their juices), tomato paste, beef broth, Worcestershire sauce, smoked paprika, oregano, salt, and black pepper. Mix until well combined.

Step 7

Bring the sauce to a simmer, then return the pork chops to the skillet, nestling them into the sauce.

Step 8

Reduce the heat to low, cover the skillet with a lid, and let it simmer for 30 minutes, flipping the pork chops halfway through.

Step 9

Remove the lid and cook for an additional 5 minutes to let the sauce thicken slightly.

Step 10

Serve the pork chops hot with generous spoonfuls of the sauce over mashed potatoes, rice, or your preferred side dish.
