Ingredients

  • 6 slices Bacon
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic, minced
  • 28 oz Canned baked beans
  • 1 15-oz can Kidney beans, drained and rinsed
  • 1 15-oz can Pinto beans, drained and rinsed
  • 0.5 cup Barbecue sauce
  • 0.25 cup Ketchup
  • 0.25 cup Brown sugar
  • 1 tbsp Yellow mustard
  • 1 tbsp Apple cider vinegar
  • 1 tsp Chili powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 tsp Optional: hot sauce

Directions

Step 1

In a large skillet or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and place it on a paper towel-lined plate. Once cool, crumble the bacon and set aside.

Step 2

Reserve about 2 tablespoons of the bacon drippings in the skillet. Discard the rest or save it for another use.

Step 3

Add the diced onion to the bacon drippings and sauté over medium heat until softened, about 4-5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Step 4

Reduce the heat to low and add the canned baked beans, kidney beans, and pinto beans to the skillet. Stir to combine.

Step 5

In a small bowl, whisk together the barbecue sauce, ketchup, brown sugar, mustard, apple cider vinegar, chili powder, salt, black pepper, and hot sauce (if using). Pour this mixture into the skillet and stir well to coat the beans.

Step 6

Increase the heat to medium and bring the mixture to a gentle simmer. Once simmering, reduce the heat to low, cover the skillet, and let the beans cook for 30 minutes, stirring occasionally to prevent sticking.

Step 7

After 30 minutes, uncover the skillet and continue to simmer for an additional 10-15 minutes to thicken the sauce, if desired.

Step 8

Stir in the crumbled bacon just before serving, reserving a small amount for garnish, if desired. Serve hot as a side dish or enjoy as a main course with cornbread or rice.
