Ingredients

  • 1 whole baguette
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 4 whole shallots
  • 1 teaspoon brown sugar
  • 150 grams mature cheddar cheese
  • 1 teaspoon whole grain mustard
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons English ale or beer
  • 1 whole egg yolk
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Slice the baguette into 12 thin rounds, about 1 cm thick, and arrange them on the prepared baking sheet.

Step 3

Brush both sides of each slice with olive oil and bake for 6-8 minutes, flipping halfway, until golden and crisp. Set aside to cool.

While the crostini cool, thinly slice the shallots.

Heat the butter in a skillet over medium heat. Add the shallots and cook for 5-6 minutes until they start to soften.
