Ingredients

  • 2 pounds ground beef
  • 1 pound ground pork
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 1 medium green bell pepper, diced
  • 3 cloves fresh garlic, minced
  • 28 ounces canned diced tomatoes
  • 15 ounces canned tomato sauce
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned pinto beans, drained and rinsed
  • 1.5 cups beef broth
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 0.5 teaspoon ground cayenne pepper
  • 1 teaspoon dried oregano
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon white vinegar
  • 1 cup cheddar cheese, shredded (optional, for garnish)
  • 0.5 cup sour cream (optional, for garnish)
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)
  • 2 stalks green onions, chopped (optional, for garnish)

Directions

Step 1

In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium heat.

Step 2

Add the diced onion and green bell pepper. Cook for 5 minutes, or until softened.

Step 3

Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Step 4

Add the ground beef and ground pork to the pot. Cook, breaking up the meat with a wooden spoon, until browned and fully cooked through, about 8-10 minutes. Drain any excess fat if needed.

Step 5

Stir in the chili powder, ground cumin, paprika, cayenne pepper, oregano, brown sugar, salt, and black pepper. Cook for 1 minute to toast the spices.

Step 6

Add the canned diced tomatoes, tomato sauce, kidney beans, pinto beans, and beef broth. Stir until well combined.

Step 7

Bring the pot to a gentle boil, then reduce the heat to low. Cover and simmer for 60 minutes, stirring occasionally to prevent sticking.

Step 8

Uncover the pot and stir in the white vinegar. Simmer uncovered for an additional 20-30 minutes to thicken the chili as desired.

Step 9

Taste and adjust seasoning with additional salt and pepper if needed.

Step 10

Serve hot, garnished with shredded cheddar cheese, sour cream, fresh cilantro, or green onions, if desired.
