Ingredients

  • 200 grams sharp cheddar cheese
  • 30 grams unsalted butter
  • 1 tablespoon all-purpose flour
  • 120 milliliters ale or beer
  • 60 milliliters whole milk
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 pinch cayenne pepper
  • 1 pinch salt
  • 1 pinch black pepper
  • 4 pieces slices of good-quality bread (such as sourdough)

Directions

Step 1

Grate the cheddar cheese and set it aside. This helps it melt evenly in the sauce.

Step 2

In a medium saucepan, melt the butter over medium heat. Once melted, stir in the flour to create a roux, cooking for about 1 minute to remove the raw flour taste.

Step 3

Gradually pour in the ale or beer, whisking constantly to avoid lumps. Follow with the milk, adding it slowly while whisking to form a smooth sauce.

Step 4

Add the grated cheddar cheese in small handfuls, stirring constantly until melted and smooth.

Step 5

Stir in the Dijon mustard, Worcestershire sauce, cayenne pepper, and a pinch each of salt and black pepper. Taste the mixture and adjust the seasonings as needed.

Step 6

Reduce the heat to low and keep the cheese mixture warm while you toast the bread.

Step 7

Toast the slices of bread until golden brown and crisp. Optionally, you can lightly butter the toast for an extra indulgent finish.

Step 8

Place the toasted bread on plates and ladle the hot cheese sauce generously over the top, letting it drip down the sides.

Step 9

Serve immediately, optionally garnished with a sprinkle of cayenne or a bit of fresh parsley for decoration.
