Ingredients

  • 1 large Leeks
  • 25 grams Butter
  • 150 grams Caerphilly cheese (or Cheddar as a substitute)
  • 150 grams Fresh white breadcrumbs
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Dijon mustard
  • 2 large Eggs
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 50 grams Plain flour
  • 4 tablespoons Vegetable oil

Directions

Step 1

Finely slice the leek, discarding the tough green parts, then rinse thoroughly to remove any grit.

Step 2

In a frying pan, melt the butter over medium heat and sauté the leek until softened but not browned, about 5 minutes. Remove from heat and let cool.

Step 3

Grate the Caerphilly cheese (or Cheddar) into a large mixing bowl. Add 100 grams of the breadcrumbs, chopped parsley, Dijon mustard, one beaten egg, the cooked leek, salt, and black pepper. Mix until fully combined.
