Ingredients

  • 225 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 110 grams Unsalted butter
  • 75 grams Granulated sugar
  • 75 grams Currants or raisins
  • 0.5 teaspoon Ground mixed spice (or cinnamon)
  • 1 count Large egg
  • 2 tablespoons Milk
  • 2 tablespoons Granulated sugar (for dusting)

Directions

Step 1

In a large mixing bowl, sift together the all-purpose flour, baking powder, salt, and ground mixed spice (or cinnamon).

Step 2

Add the unsalted butter to the bowl. Using your fingertips, rub the butter into the flour mixture until the mixture resembles fine breadcrumbs.

Step 3

Stir in the granulated sugar and currants (or raisins), ensuring they are evenly distributed.

Step 4

In a small bowl, beat the egg lightly and then add it to the flour mixture.

Step 5

Add the milk, one tablespoon at a time, and mix to form a soft but not sticky dough. If the dough feels too dry, add a tiny splash more milk.

Step 6

Lightly flour a clean surface and roll out the dough to a thickness of about 1 cm (0.4 inches).

Step 7

Use a round cookie cutter (about 6 cm or 2.5 inches in diameter) to cut out circles from the dough. Re-roll any scraps to make as many cakes as possible.

Step 8

Heat a heavy-based frying pan or griddle over medium heat and lightly grease it with butter or oil.

Step 9

Cook the Welsh Cakes in batches over low to medium heat for 2-3 minutes on each side, until they are golden brown and cooked through. Be careful not to let them burn.

Step 10

Transfer the cooked Welsh Cakes to a plate to cool slightly. While still warm, dust them with a little extra granulated sugar.

Step 11

Serve warm or at room temperature, plain or with a smear of butter. Enjoy!
