  • 250 grams all-purpose flour
  • 1 teaspoon baking powder
  • 120 grams unsalted butter

  • 1 teaspoon ground mixed spice
  • 80 grams dried sultanas or raisins
  • 40 grams dried chopped macadamias
  • 1 egg
  • 2 tablespoons milk
  • 1 tablespoon vegetable oil or butter (for frying)
  • 2 tablespoons icing sugar (optional, for dusting)

Directions

Step 1

In a large bowl, sift together the flour and baking powder. Add the ground mixed spice and stir to combine.

Add the cold butter to the flour mixture and rub it in with your fingertips until the mixture resembles fine breadcrumbs.

Stir in the caster sugar, dried sultanas (or raisins), and the chopped macadamias.

In a small bowl, beat the egg and add 2 tablespoons of milk. Pour this mixture into the flour mixture and mix gently until you form a soft dough.
