  • 1 pinch salt
  • 115 grams unsalted butter
  • 50 grams currants
  • 1 unit large egg
  • 2 tablespoons milk
  • 2 tablespoons sugar (for dusting)

Directions

Step 1

Sift the flour, baking powder, and mixed spice into a large bowl.

Step 2

Add the granulated sugar and a pinch of salt to the sifted dry ingredients.

Step 3

Cube the unsalted butter and rub it into the flour mixture using your fingertips until it resembles breadcrumbs.

Stir in the currants, mixing evenly through the dry mixture.

In a small bowl, beat the egg lightly, then add it to the flour and butter mixture.
