  • 6 cups Vegetable broth (low-sodium)
  • 1 cup Pearl barley, uncooked
  • 2 cups Frozen green beans, chopped
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 whole Bay leaf
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

In a large soup pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes, stirring occasionally, until softened and translucent.

Stir in the minced garlic and cook for an additional 1 minute until fragrant.
