  • 14.5 ounces diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 0.5 cup quinoa (optional)
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Finely dice the onion and chop the red, green, and yellow bell peppers into small pieces. Add them to the pot and sauté for 5-7 minutes until softened.
