Ingredients

  • 6 ounces Whole wheat spaghetti
  • 14 ounces Extra-firm tofu
  • 1 cup Low-fat cottage cheese
  • 2 large Egg whites
  • 2 cups Spinach, fresh
  • 1 cup Zucchini, diced
  • 1 cup Tomato, diced
  • 1 cup Low-sodium marinara sauce
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, ground
  • 0 as needed Olive oil spray
  • 2 tablespoons Grated Parmesan cheese

Directions

Step 1

Preheat the oven to 375°F (190°C). Lightly spray a 9-inch pie dish with olive oil spray and set aside.

Step 2

Cook the whole wheat spaghetti according to the package instructions until al dente. Drain and set aside.

Step 3

While the pasta cooks, press the extra-firm tofu between paper towels to remove excess moisture. Then, crumble it into a large mixing bowl.
