Ingredients

  • 3 tablespoons Granulated sugar
  • 1 cup Unsweetened pumpkin puree
  • 1 can (12 oz) Fat-free evaporated milk
  • 2 large Eggs
  • 2 large Egg whites
  • 0.5 cup Granulated sugar substitute (such as Splenda or Stevia)
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground ginger
  • 1 pinch Pinch of salt
  • 3 cups Boiling water

Directions

Step 1

Preheat your oven to 325°F (160°C).

Step 2

In a small saucepan over medium heat, melt the granulated sugar until it turns into a golden caramel. Carefully pour the caramel into the bottom of a 9-inch round baking dish or six individual ramekins, tilting to evenly coat the base. Set this aside to cool and harden.

In a large mixing bowl, whisk together the pumpkin puree, evaporated milk, eggs, egg whites, sugar substitute, vanilla extract, ground cinnamon, ground nutmeg, ground ginger, and a pinch of salt until smooth and well combined.

To serve, run a knife around the edges of the flan to loosen it. Invert the baking dish or ramekins onto serving plates, allowing the caramel to drizzle over the flan.
