Ingredients

  • 1 spray Cooking spray
  • 1 medium Onion, chopped
  • 2 cloves Garlic cloves, minced
  • 3 medium Carrots, sliced
  • 3 stalks Celery stalks, sliced
  • 1 medium Zucchini, diced
  • 1 cup Green beans, trimmed and chopped
  • 2 cups Cabbage, shredded
  • 14.5 oz Tomatoes, diced (canned, no salt added)
  • 6 cups Vegetable broth (low-sodium)
  • 1 tsp Dried basil
  • 1 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.25 tsp Ground black pepper
  • 2 cups Baby spinach leaves

Directions

Step 1

Spray a large pot with cooking spray and heat over medium heat.

Step 2

Add the chopped onion and minced garlic, and sauté for 3–5 minutes until softened and fragrant.

Step 3

Add the sliced carrots, celery, zucchini, green beans, and shredded cabbage to the pot. Cook for an additional 5 minutes, stirring occasionally.

Step 4

Stir in the diced tomatoes (with their juice), vegetable broth, dried basil, dried oregano, salt, and black pepper.

Step 5

Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, or until the vegetables are tender.

Add the baby spinach leaves to the soup and stir until they wilt, about 2 minutes.
