Ingredients

  • 1.5 pounds Boneless skinless chicken breasts
  • 1 large Red bell pepper
  • 1 large Green bell pepper
  • 1 cup Pineapple chunks (packed in 100% juice, drained)
  • 0.25 cup Low-sodium soy sauce
  • 0.25 cup Rice vinegar
  • 0.25 cup Ketchup
  • 2 tablespoons Brown sugar (packed)
  • 3 cloves Garlic (minced)
  • 2 tablespoons Cornstarch
  • 2 tablespoons Cold water
  • 0 optional Cooked brown rice (optional, for serving)
  • 0 optional Chopped green onions (optional, for garnish)
  • 0 optional Sesame seeds (optional, for garnish)

Directions

Step 1

Cut the chicken breasts into bite-sized pieces and set aside.

Step 2

Chop the red and green bell peppers into chunks approximately the same size as the chicken. Drain the pineapple chunks and set aside.

Step 3

In a medium mixing bowl, whisk together the soy sauce, rice vinegar, ketchup, brown sugar, and minced garlic to create the sauce.

Place the chicken pieces in the bottom of the crock pot. Layer the chopped bell peppers and pineapple chunks on top of the chicken.
