Ingredients

  • 1.5 pounds Boneless, skinless chicken thighs
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 cup Onion, finely chopped
  • 1 cup Red bell pepper, diced
  • 0.5 cup Frozen peas
  • 1 can (14.5 ounces) Diced tomatoes
  • 2 cups Low-sodium chicken broth
  • 1 cup Brown rice (uncooked)
  • 6 ounces Turkey sausage, sliced
  • 0.5 pound Raw shrimp, peeled and deveined
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

In a small bowl, combine smoked paprika, ground turmeric, garlic powder, salt, and pepper.

Step 2

Rub the spice mixture onto the chicken thighs, coating them evenly.

Step 3

Heat olive oil in a skillet over medium-high heat and sear the chicken thighs for 2-3 minutes on each side until lightly browned. Transfer to the crock pot.
