Ingredients

  • 8 pieces cannelloni pasta tubes
  • 1 cup fresh crab meat
  • 1 cup ricotta cheese (low-fat)
  • 0.25 cup fresh basil leaves
  • 0.5 cup parmesan cheese (grated, divided)
  • 1 piece garlic clove (minced)
  • 1 piece egg (lightly beaten)
  • 1 cup crushed tomatoes (canned, no salt added)
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil and cook the cannelloni pasta tubes according to package instructions until slightly undercooked. Drain and set aside.

Step 3

In a large mixing bowl, combine the crab meat, ricotta cheese, 1/4 cup of parmesan cheese, minced garlic, egg, and chopped fresh basil. Mix well until fully combined. Season with salt and black pepper.

Fill a piping bag or a zip-top bag with the crab-ricotta mixture, cutting a small hole at the tip. Carefully pipe the mixture into each cannelloni tube until fully stuffed.
