Ingredients

  • 15 ounces (1 can, drained and rinsed) Black beans, canned
  • 2 large Eggs
  • 0.25 cups Unsweetened cocoa powder
  • 0.5 cups Quick oats
  • 0.75 cups Sugar substitute (e.g., Stevia, Splenda)
  • 2 tablespoons Coconut oil or unsweetened applesauce
  • 1 teaspoons Vanilla extract
  • 1 teaspoons Baking powder
  • 0.25 cups Dark chocolate chips (optional)
  • 0.25 teaspoons Salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking pan or line it with parchment paper for easier cleanup.

Step 2

Combine the black beans, eggs, cocoa powder, quick oats, sugar substitute, coconut oil or applesauce, vanilla extract, baking powder, and salt in a blender or food processor.

Step 3

Blend until completely smooth. Scrape down the sides of the blender/processor as needed to ensure all ingredients are incorporated.

Step 4

If using, stir in the dark chocolate chips after blending to add texture.

Step 5

Pour the batter into the prepared baking pan, spreading it evenly with a spatula.

Step 6

Bake in the preheated oven for 20 minutes or until the top is set and a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

Step 7

Remove the pan from the oven and allow the brownies to cool completely in the pan before slicing into 12 equal squares.

Step 8

Store any leftovers in an airtight container in the refrigerator for up to 5 days or freeze for longer storage.
