  • 1 medium Yellow onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 225 g Mushrooms (sliced)
  • 240 ml Beef broth (low-sodium)
  • 1 tbsp Worcestershire sauce
  • 2 tsp Cornstarch
  • 2 tbsp Water
  • 120 g Plain non-fat Greek yogurt
  • 240 g Egg noodles (whole wheat, cooked according to package instructions)
  • 2 tbsp Fresh parsley (chopped, for garnish)

Directions

Step 1

Season the beef strips with salt and black pepper.

Step 2

Heat the olive oil in a large non-stick skillet over medium-high heat. Add the beef strips and sear for 2-3 minutes on each side until browned. Remove and set aside.

Reduce the heat to medium and add the chopped onion to the same skillet. Sauté for 2-3 minutes until softened, then add garlic and cook for an additional minute.
