Ingredients

  • 4 medium (about 2 pounds) Russet potatoes
  • 1 cup Fat-free evaporated milk
  • 1 cup Low-fat shredded cheddar cheese
  • 2 tablespoons All-purpose flour
  • 1 tablespoon Unsalted butter
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 as needed Nonstick cooking spray
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly spray an 8x8-inch baking dish with nonstick cooking spray and set aside.

Step 2

Peel the potatoes and slice them into thin, even rounds (about 1/8 inch thick) for consistent cooking. Set the slices aside in water to prevent browning.

Step 3

In a medium saucepan, melt the butter over low heat. Once melted, whisk in the flour and cook for 1–2 minutes, stirring constantly, to remove the raw flour taste.

Step 4

Slowly whisk in the fat-free evaporated milk, ensuring no lumps form. Cook over medium heat, stirring constantly, until the mixture thickens, about 3–4 minutes.

Step 5

Stir in the garlic powder, onion powder, salt, and pepper. Remove from heat and stir in half (1/2 cup) of the shredded cheese until melted and smooth.

Step 6

Drain the potato slices and pat them dry. Layer half of the potato slices evenly in the prepared baking dish. Pour half of the cheese sauce over the potatoes, spreading it evenly.

Step 7

Add the remaining potato slices on top, followed by the rest of the cheese sauce. Smooth it out so all the potatoes are evenly coated.

Step 8

Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly on top of the dish.

Step 9

Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 25–30 minutes, or until the potatoes are fork-tender and the top is golden and bubbly.

Step 10

Allow the dish to cool for 5 minutes before serving. Garnish with chopped fresh parsley, if desired, and enjoy!
