Ingredients

  • 4 cups Green cabbage
  • 2 cups Red cabbage
  • 1 cup Carrots
  • 1 medium Apple (Granny Smith or Honeycrisp)

  • 2 tablespoons Light mayonnaise
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Celery seed (optional)

Directions

Step 1

Thinly slice the green and red cabbages using a sharp knife or a mandoline slicer. Place in a large mixing bowl.

Step 2

Peel and shred the carrots using a box grater or food processor, and add to the bowl with the cabbage.

Step 3

Core and thinly slice the apple into matchstick-sized pieces or finely dice it. Add to the mixing bowl with the cabbage and carrots.
