Ingredients

  • 500 grams lean beef stew meat
  • 1 tablespoon smoked paprika
  • 1 teaspoon olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 cups low-sodium beef broth
  • 2 tablespoons tomato paste
  • 300 grams potatoes, cubed
  • 2 carrots, sliced
  • 1 bay leaf
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Heat the olive oil in a large, non-stick pot or Dutch oven over medium-high heat.

Step 2

Add the beef stew meat, season with salt and pepper, and sear for 2-3 minutes on each side until browned. Remove beef from the pot and set aside.

In the same pot, add the diced onion and cook for 3-4 minutes, stirring occasionally, until softened.
