  • 1 cup, shredded reduced-fat mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 1 as needed cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C).

Slice the eggplants into 1/4-inch thick rounds. Sprinkle both sides lightly with salt and let the slices sit on paper towels for 20 minutes to draw out excess moisture. Pat them dry.
