  • 12 ounces Smoked sausage (andouille or kielbasa), sliced

  • 1 medium Green bell pepper, diced
  • 2 stalks Celery, diced
  • 3 cloves Garlic, minced
  • 2 15-ounce cans Red kidney beans, drained and rinsed
  • 2 cups Chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon Dried thyme
  • 1 teaspoon Smoked paprika
  • 1 leaf Bay leaf
  • 4 cups White rice, cooked
  • 2 stalks Green onions, chopped (for garnish)
  • 1 to taste Hot sauce (optional, for serving)

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add sliced smoked sausage to the pot and cook for 4–5 minutes, stirring occasionally, until browned. Remove the sausage with a slotted spoon and set aside.

Step 3

In the same pot, add the diced onion, green bell pepper, and celery. Cook for 5–6 minutes, stirring often, until the vegetables are softened.

Add the minced garlic and cook for 1 minute, stirring constantly, until fragrant.

Stir in the drained and rinsed kidney beans, chicken broth, Cajun seasoning, dried thyme, smoked paprika, and bay leaf. Bring the mixture to a simmer.
