Heat olive oil in a large pot or Dutch oven over medium heat.
Add sliced smoked sausage to the pot and cook for 4–5 minutes, stirring occasionally, until browned. Remove the sausage with a slotted spoon and set aside.
In the same pot, add the diced onion, green bell pepper, and celery. Cook for 5–6 minutes, stirring often, until the vegetables are softened.
Add the minced garlic and cook for 1 minute, stirring constantly, until fragrant.
Stir in the drained and rinsed kidney beans, chicken broth, Cajun seasoning, dried thyme, smoked paprika, and bay leaf. Bring the mixture to a simmer.
Return the cooked sausage to the pot. Stir everything together, cover, and let simmer on low heat for 20 minutes, stirring occasionally.
While the beans are simmering, prepare the white rice according to package instructions, if it’s not already cooked.
