Ingredients

  • 12 ounces spaghetti
  • 3 tablespoons olive oil

  • 4 cloves garlic, minced

  • 2 10-ounce cans canned chopped clams (with juice)
  • 0.5 cups dry white wine
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Bring a large pot of water to a boil. Add a generous pinch of salt and cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.

Step 2

In a large skillet, heat the olive oil and butter over medium heat until the butter is melted. Add the minced garlic and red pepper flakes, and sauté for 1-2 minutes until fragrant but not browned.

Add the canned clams with their juice and the white wine to the skillet. Stir to combine, then bring the mixture to a simmer. Let it cook for 5 minutes to slightly reduce the liquid and concentrate the flavors.

Stir in the lemon zest and parsley, and season the sauce with salt and black pepper to taste.
