  • 1 pound Ground beef
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 packet Taco seasoning
  • 2 cups Enchilada sauce
  • 8 pieces Flour tortillas (medium size)
  • 2 cups Shredded Mexican cheese blend
  • 2 tablespoons Cilantro, chopped (for garnish)
  • 0.5 cup Sour cream (optional, for serving)
  • 1 tablespoon Vegetable oil (or cooking spray)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with vegetable oil or cooking spray.

Step 2

In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add diced onion and cook for 2-3 minutes until softened.

Add the ground beef to the skillet and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
