  • 1 pound Dried navy beans
  • 8 slices Bacon
  • 1 large Yellow onion, diced

  • 1 cup Ketchup
  • 0.5 cup Brown sugar
  • 0.333 cup Molasses
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Apple cider vinegar
  • 2 teaspoons Smoked paprika
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Salt
  • 4 cups Water or chicken stock

Directions

Step 1

Rinse the navy beans thoroughly and soak them overnight in a large bowl filled with water. Drain and rinse again before cooking.

Step 2

In a large pot, cook the bacon slices over medium heat until crispy. Remove the bacon, crumble it, and set it aside. Leave about 2 tablespoons of bacon fat in the pot.

Step 3

Add the diced onion to the pot and sauté over medium heat until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.
