Ingredients

  • 2 cups All-purpose flour
  • 0.75 cups Warm water
  • 1 pound Ground pork
  • 0.5 pound Raw shrimp, peeled and finely chopped
  • 3 stalks Green onions, finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 1 tablespoon Cornstarch
  • 0.5 teaspoons Salt
  • 0.25 teaspoons White pepper
  • 2 tablespoons Vegetable oil (for cooking)
  • 0.25 cups Water (for steaming during cooking)
  • 0 optional Dipping sauce (soy sauce, vinegar, and chili oil blend)

Directions

Step 1

Start by preparing the wrappers. In a large bowl, mix the all-purpose flour with warm water a little at a time, kneading until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.

Step 2

While the dough is resting, prepare the filling. In a mixing bowl, combine ground pork, chopped shrimp, green onions, garlic, ginger, soy sauce, sesame oil, cornstarch, salt, and white pepper. Mix well until the filling is cohesive and sticky.

Step 3

After the dough has rested, transfer it to a floured surface. Roll it into a long log shape, about 1 inch in diameter. Cut the log into 1-inch pieces.

Step 4

Flatten each piece into a small disc, then use a rolling pin to roll out into thin, round wrappers about 3 inches in diameter. Cover the wrappers with a damp cloth as you work to prevent them from drying out.

Step 5

To assemble each dumpling, take a wrapper and place about 1 tablespoon of filling in the center. Fold the wrapper over the filling to form a half-moon. Pinch the edges tightly to seal, pleating as you go for a decorative touch.

Step 6

Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Arrange the dumplings in the skillet in a single layer. Cook until the bottoms are golden brown, about 2–3 minutes.

Step 7

Once browned, add 1/4 cup of water to the skillet and immediately cover with a lid. Allow the dumplings to steam for about 5 minutes, or until the filling is fully cooked and the wrappers are tender.

Step 8

Remove the lid and cook for another 1–2 minutes to allow the bottoms to crisp up again. Transfer the dumplings to a serving plate.

Step 9

Serve the wedding dumplings hot with dipping sauce on the side, if desired.
