Ingredients

  • 2.5 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 4 tablespoons Unsalted butter, softened
  • 3 Large eggs
  • 1.5 teaspoons Almond extract
  • 1 teaspoon Vanilla extract
  • 0.75 cup Sliced almonds, lightly toasted
  • 1 cup White chocolate chips
  • 1 teaspoon Vegetable oil

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Cut in the softened butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Step 4

In a separate bowl, whisk together the eggs, almond extract, and vanilla extract.

Step 5

Gradually add the wet ingredients to the dry mixture, stirring until a dough begins to form.

Step 6

Fold in the toasted sliced almonds until evenly distributed.

Step 7

Divide the dough in half and shape each half into a long, flat log approximately 12 inches long and 3 inches wide on the prepared baking sheet.

Step 8

Bake the logs in the preheated oven for 25-30 minutes, or until golden brown and firm to the touch.

Step 9

Remove from the oven and let the logs cool for 10 minutes. Reduce the oven temperature to 325°F (160°C).

Step 10

Using a serrated knife, slice the logs diagonally into 1/2-inch thick biscotti slices.

Step 11

Place the slices cut side down on the baking sheet and bake for an additional 10-12 minutes per side, or until crisp and golden.

Step 12

Let the biscotti cool completely on a wire rack.

Step 13

In a microwave-safe bowl, melt the white chocolate chips with the vegetable oil in 30-second intervals, stirring after each interval until smooth.

Step 14

Drizzle the melted white chocolate over the cooled biscotti using a spoon or a piping bag.

Step 15

Allow the chocolate to set completely before serving or storing. Store in an airtight container for up to 1 week.
