  • 2 cups beef broth
  • 15 ounces kidney beans (canned), drained and rinsed
  • 15 ounces black beans (canned), drained and rinsed
  • 2 tablespoons vegetable oil
  • 3 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 ounce dark chocolate, finely chopped
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 0 sour cream (optional, for topping)
  • 0 shredded cheddar cheese (optional, for topping)
  • 0 chopped green onions (optional, for topping)

Directions

Step 1

Heat a large, heavy-bottomed pot or Dutch oven over medium heat. Add the chopped bacon and cook until crispy. Remove with a slotted spoon and set aside, leaving the bacon grease in the pot.

Add the ground beef to the pot and cook until browned, breaking it into small pieces with a spatula. Once browned, remove the beef and set aside.

Return the cooked ground beef and bacon to the pot. Add the crushed tomatoes, tomato paste, and beef broth. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low. Simmer uncovered for 45 minutes, stirring occasionally to prevent sticking.

After 45 minutes, add the drained kidney beans, black beans, and chopped chipotle peppers. Stir well and continue to simmer for another 30 minutes.

Stir in the finely chopped dark chocolate during the last 5 minutes of cooking to enhance the depth of flavor.
