Ingredients

  • 150 g Brie cheese
  • 4 tbsp Blackberry jam
  • 1 cup Fresh mixed greens (arugula, spinach, etc.)
  • 4 slices Artisan bread slices
  • 2 tbsp Unsalted butter
  • 1 tsp Honey
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Preheat a skillet or griddle over medium heat.

Step 2

Using a small knife, remove the rind from the brie cheese and cut the brie into small chunks.

Step 3

In a mixing bowl, whip the brie cheese with a fork or whisk until creamy and spreadable. If needed, warm it slightly in the microwave for about 10 seconds to soften further.

Step 4

Spread 1 tablespoon of blackberry jam evenly over one side of each of the bread slices.

Step 5

On two of the bread slices (the bottom halves), spread a generous layer of the whipped brie over the jam.

Step 6

Top the whipped brie with the fresh mixed greens, dividing them evenly between the two sandwiches.

Step 7

Drizzle a small amount of honey over the greens, and season each sandwich with a pinch of salt and black pepper.

Step 8

Close the sandwiches with the remaining bread slices, jam-side down, pressing gently to seal the ingredients.

Step 9

Spread a thin layer of butter on the outer sides of each sandwich (top and bottom).

Step 10

Place the sandwiches on the preheated skillet and cook for 2-3 minutes on each side, or until the bread is golden brown and lightly crisped.

Step 11

Remove the sandwiches from the skillet and let them rest for 1 minute before slicing in half and serving.
