Ingredients

  • 4 cups (cubed) Fresh watermelon
  • 0.5 cups Granulated sugar
  • 2 packets (about 4 1/2 teaspoons) Unflavored gelatin
  • 0.5 cups Cold water
  • 2 tablespoons Lemon juice
  • 4 leaves Mint leaves (optional, for garnish)

Directions

Step 1

Cut the watermelon into cubes and remove any seeds. Blend the watermelon in a blender until smooth to make about 3 cups of watermelon juice.

Step 2

Strain the watermelon puree through a fine-mesh sieve into a bowl to remove the pulp, leaving just the juice.

Step 3

In a small bowl, combine the unflavored gelatin with the cold water and let it sit for 5 minutes to bloom.

In a small saucepan over low heat, add the bloomed gelatin and stir until completely dissolved. Do not boil.
