Ingredients

  • 1 medium-sized Whole seedless watermelon
  • 1 cup Heavy whipping cream
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Strawberries
  • 1 cup Blueberries
  • 2 Kiwi
  • 1 cup Slivered almonds
  • 10 leaves Mint leaves (optional)

Directions

Step 1

Cut off both ends of the watermelon to create a flat top and bottom. Stand the watermelon upright and carefully slice off the rind using a sharp knife, shaping it into a smooth, round cake-like cylinder.

Step 2

Pat the watermelon cylinder dry with paper towels to remove excess moisture. This helps the whipped cream adhere better.

Step 3

In a chilled mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Beat with a hand mixer on high speed until stiff peaks form.

Step 4

Using a spatula, spread the whipped cream evenly over the entire surface of the watermelon, covering it completely like frosting on a cake.

Step 5

Wash and prepare the fruits: slice the strawberries, peel and slice the kiwi, and keep the blueberries whole. Arrange the fruits on top and along the sides of the cake in a decorative pattern.

Step 6

Press the slivered almonds gently into the sides of the cake for added texture and garnish with fresh mint leaves, if desired.

Step 7

Chill the watermelon cake in the refrigerator for at least 15 minutes before serving to allow it to set.

Step 8

Slice and serve immediately. Enjoy this guilt-free, hydrating dessert!
