  • 4 cups vegetable stock
  • 4 cups, packed watercress
  • 0.5 cup heavy cream
  • 1 tablespoon lemon juice
  • 0.25 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 loaf, for serving (optional) crusty bread

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and cook for 4-5 minutes, stirring occasionally, until translucent.

Step 3

Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 4

Add the diced potatoes to the pot and stir well. Cook for 3-4 minutes.
