Ingredients

  • 4 cups vegetable broth
  • 5 cups watercress, thick stems removed
  • 0.5 cups heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 1 teaspoon lemon juice
  • 2 tablespoons crème fraîche (optional, for garnish)
  • 2 sprigs fresh watercress sprigs (optional, for garnish)

Directions

Step 1

In a large pot, melt the butter over medium heat.

Step 2

Add the chopped onion and sauté until soft and translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for another 1 minute, until fragrant.

Add the diced potato and vegetable broth to the pot. Bring to a boil, then reduce the heat to a simmer. Cook until the potato is tender, about 10 minutes.
