Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 pound ground beef
  • 28 ounces canned crushed tomatoes
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped (for garnish)
  • 0.5 cup shredded cheddar cheese (optional, for topping)
  • 0.25 cup sour cream (optional, for topping)
  • 4 pieces lime wedges (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and sauté for 5-7 minutes, until the onion is translucent and softened.

Step 3

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 4

Add the ground beef to the pot, breaking it apart with a wooden spoon as it cooks. Cook until the beef is browned and no longer pink, about 8-10 minutes. Drain any excess fat if necessary.

Step 5

Pour in the crushed tomatoes, kidney beans, black beans, and beef broth. Stir thoroughly to combine.

Step 6

Add the chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper (if using), salt, and black pepper. Stir well to incorporate all the spices.

Step 7

Bring the chili to a simmer over medium heat.

Step 8

Reduce the heat to low and let the chili simmer uncovered for 30 minutes, stirring occasionally to prevent sticking.

Step 9

Taste the chili and adjust seasonings if needed.

Step 10

Serve hot, garnished with fresh cilantro. Add shredded cheddar cheese, sour cream, and lime wedges as desired.
